Historic red maize variety from northern Italy for the production of maize flour.
This red maize variety comes from Italy and is one of the oldest and most traditional maize varieties in Italy. In northern Italy, between Turin and the Aosta Valley, it was one of the most important foodstuffs until the 1950s. The maize with red kernels was processed into maize flour and then mainly used to make polenta. Thanks to the work of various actors in Italy and in collaboration with government organisations, corn has been saved from disappearing and is now slowly finding its way back onto the plates of Italian kitchens.
