Like other cultivated varieties, sugar beet originates from wild beet. As its name suggests, sugar beet has a very high sugar content. For a good yield, sugar beet needs nutrient-rich soil, plenty of light and a good water supply. Sugar beet can be eaten raw, similar to carrots, but it is also a culinary delicacy when cooked or fried. It can also be used to make traditional beet syrup. There are now virtually no open-pollinated varieties available on the market for amateur gardeners.
